I recently tested out a new recipe that I thought was pretty tasty, so I figured I’d share it with you. It’s taco soup and the ingredients are simple and so is the cooking, because best of all, it’s a crockpot recipe. You just throw everything in there and turn it to high for 4 hrs and BAM, it’s done! So here’s how you make it…
Step 1: Gathering Ingredients
2 chicken breasts, 1 bell pepper chopped (red, yellow or orange), 1/2 medium onion chopped, 2 cans of rotel tomatoes with chiles drained, 1 can of corn drained, 1 can of black beans drained, 1 container of chicken broth, 1 Tablespoon of chili powder, 1 teaspoon of garlic powder, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, and 1 8oz. Package of cream cheese.
Step 2: Putting it Together
Place your 2 chicken breasts in the bottom of the crockpot. Dump all your other prepped ingredients into the crockpot except for the cream cheese. Give it a good stir. Turn the crockpot on High for 4 hours. When there is 30 minutes of cooking time remaining, add the cream cheese in cubes and stir it in. Pull the chicken breasts out with tongs and shred it up on a plate with some forks. Then add the shredded meat back to the crockpot and let it finish cooking.
Step 3: Eat and Enjoy!
Give it one last good stir and its done! Serve this in bowls with toppings like chopped up avocado pieces, some Pico de Gallo, or chips like Fritos, and crispy tortilla strips. Yum!
