Okay, so I know how this sounds… Like muffins made with turkey. Ew, right? Well, that’s not actually what they are. They’re more like mini turkey meatloafs, they just happen to be made using a muffin tin. Hence the odd name. They are however, delicious despite the strange name. They’re also fast cooking and require simple ingredients. So here’s the recipe, it will make 24 decent sized turkey muffins or you can do half amounts to make 12 turkey muffins. My kids and I like these as leftovers, so I usually do the whole recipe.
First: You need to gather 2 muffin tins, a large mixing bowl, a can of spray oil, 3 lbs of lean ground turkey, 2 boxes of Stove Top Stuffing Savory Herb flavor, and 4 extra large eggs.
Second: Preheat your oven to 375 degrees. Then use the spray oil to grease each individual cup of the muffin tins.
Third: Add the ground turkey, the Stove Top Stuffing, and the eggs to the mixing bowl. Here’s the messiest part, using your hands mix the ingredients together until thoroughly combined (I use food safe disposable kitchen gloves for this part).
Third: Drop even amounts of your turkey mixture into each of the muffin cups.
Fourth: Place the turkey muffins into your preheated oven and set the timer for 25 to 35 minutes. Cook time will depend on the size of the individual muffins. Always check that the internal temperature has reached 165 degrees to ensure doneness. They should be slightly browned in color on the tops as another indication of being completely cooked through.
Fifth and Final: Remove each of the muffins from the tins and place them on a cooling rack or plate/platter to serve them.
